Vegetable and Cheese Sandwich

Vegetable and cheese sandwich


Healthy and delicious vegetable and cheese sandwich
Cooking Time: 15 minutes
Prep Time: 10 minutes
Serves: 2

Ingredients:
  1. Garlic,chopped - 1 large clove
  2. Onion,finely chopped - 1 tbsp
  3. Spring onion whites,chopped - 1/2 tbsp
  4. Green chilies,finely chopped - 1 , according to taste
  5. Cabbage,chopped - 1/2cup
  6. Carrot,chopped - 1/4cup
  7. Bell pepper ( red and green),chopped - 1/2cup
  8. Soya sauce- 1/2 tsp
  9. Black pepper powder -1/2 tsp(or according to taste)
  10. Tomato sauce - 1 tsp + more as required
  11. Grated mozzarella cheese - as required
  12. Butter - as required
  13. Whole wheat bread- 4 slices
  14. Salt - to taste
  15. Vegetable oil/olive oil /sesame oil- as required
Instructions:
  • Heat oil in a pan , add garlic, onion , spring onion whites and green chilies.Saute for about 20 to 30 seconds.Next add chopped carrot and cabbage.Saute for few minutes or until tender.
  • Next add bell pepper and stir fry for about a minute.Now add soya sauce and stir well.
  • Add black pepper powder ,1 tsp tomato sauce and salt to tatse,mix well until combined.Switch off the stove and allow the vegetable mixture to cool slightly
  • Take 2 slices of bread and spread a thin layer of tomato sauce on each.Spread half of the prepared vegetable mixture followed with the grated cheese on one slice.
  • Cover with the other slice.Repeat with the remaining slices.Heat butter in a pan .Place the sandwich in the pan and grill until both sides are golden brown.
  • Transfer the sandwich to a plate,cut in half and serve immediately.
  • NOTES
    • Adjust the amount of green chilies and black pepper powder according to your taste.

                                                                Moist and delicious gluten free,rice flour chiffon cake.
                                                                Prep Time: 10 minutes

                                                                Ingredients:
                                                                1. Eggs - 3 large( separated)
                                                                2. Salt - 1 pinch
                                                                3. Caster sugar- 110 gms + 1 tbsp
                                                                4. White Vinegar- 1/2 tsp
                                                                5. Sunflower oil - 65 ml( i used olive oil)
                                                                6. Lemon zest- from 4 lemons( i used orange zest from 1 large orange)
                                                                7. Lemon juice - from 2 lemons( i used 1/2 cup orange juice)
                                                                8. Rice flour - 110 gms( approx 3/4 cup)
                                                                9. Baking Soda- 1/4 tsp
                                                                10. Icing Sugar- for dusting,if required
                                                                Instructions:

                                                              • Preheat oven to 180 Deg C.Line the cake tin with parchment paper, set aside.In a large bowl,whisk the egg whites with a  pinch of salt, until they form soft peaks.
                                                              • Next add 1 tbsp caster sugar and whisk until stiff peaks form.Whisk in the white vinegar and keep aside until required.
                                                              • In a separate bowl, whisk together 110 gms caster sugar,oil ,lemon zest and lemon juice until well combined.
                                                              • Sift over the rice flour and baking soda into the mixture,mix well until combined.
                                                              • Add half of the egg whites and gently fold to combine.



                                                              • Then fold in the rest of the egg whites,working gently so as not to lose any air.
                                                              • Transfer the batter into the prepared cake tin and bake for about 40 to 45 minutes or until a skewer inserted into the center of the cake comes out clean.Do not over bake,if you do so the cake may turn out dry.( I used a 5" square pan and a 5" ring mould and baked for approx 30 minutes)
                                                              • Allow to cool completely before removing from the pan.Sprinkle  icing sugar or drizzle chocolate fudge sauce on top( recipe coming soon) and serve.

                                                                                  Cooking Time: 20 minutes
                                                                                  Prep Time: 20 minutes +  rising

                                                                                  1. All purpose flour- 1/2 cup + 3 cups( total 455 gms)
                                                                                  2. Active dry yeast- 2 and 1/4 tsp( 1 packet /7 gms)
                                                                                  3. Lukewarm water - 235 ml(approx 1 cup)
                                                                                  4. Egg - 1 large
                                                                                  5. Butter,melted - 3 tbsp
                                                                                  6. Sugar - 3 tbsp
                                                                                  7. Salt- 1 and 1/4 tsp (8 gms)
                                                                                  8. Egg - 1 medium ( for egg wash)
                                                                                  9. Milk - 1 tbsp( for egg wash0
                                                                                  10. Sesame seeds - as required
                                                                                  Instructions:

                                                                                • In a large bowl combine together 1/2 cup all-purpose flour, yeast and lukewarm water.Whisk together until smooth.Keep aside for 10 to 15 minutes or until foamy.
                                                                                • Add 1 egg, melted butter, sugar and salt.
                                                                                • Whisk well until combined.
                                                                                • Add the remaining flour and mix well.
                                                                                • Knead well for 10 to 12 minutes.The dough will be soft, elastic and slightly sticky.Drizzle 1 or 2 tsp oil into the bowl and turn the dough to coat the entire surface thinly with oil.Cover it with aluminum foil or plastic wrap and leave to rise in a warm place until doubled in volume for about 2 hours.
                                                                                • Punch down the risen dough using your  fist.Transfer the dough onto a lightly floured surface.
                                                                                • Form into a 1/2 " thick rectangle and divide it into  8 equal pieces.Form each piece into 1/2 " thick rounds .Line a baking tray with parchment paper.Arrange the buns 1/2 " apart on prepared baking tray.Dust the buns very lightly with flour.Loosely cover with a plastic wrap and let rise in a warm place until almost doubled in volume for about 1 hour.

                                                                                                                                      • Heat oil in a pan,add ginger and garlic, saute for few seconds.Add onion and saute until it turns translucent.
                                                                                                                                      • Next add carrots and cook for 1 or  2 minutes on medium high flame.Add bell pepper and mix well.
                                                                                                                                      • Add kashmiri chili powder,garam masala and cumin powder.Saute for about a 30 seconds.Next add tomato ketchup and mix well until combined.
                                                                                                                                      • Finally add black pepper powder,crumbled paneer and salt to taste.Cook for 2 more minutes,stirring continuously.Set aside.
                                                                                                                                      • To prepare the sandwich,cut open your sandwich bread .Brush oil /butter on a pan and toast the bread.
                                                                                                                                      • Repeat with the remaining bread rolls.  
                                                                                                                                      • Place 2 to 3 tbsp of the paneer filling on one half of the bread and top with the other half  of the bread.Repeat with the remaining bread rolls.

                                                                                                                                        • If you don't have tomato ketchup,then make a "quick version tomato ketchup"  like i did.All you have to do is,cook one medium pureed tomato(about 1/4 cup) along with 1/4 tsp sugar,1 pinch cumin powder,1 pinch garam masala,1/8 tsp ginger garlic paste,1 pinch black pepper powder,1/8 tsp kashmiri chili powder and salt to taste in a heavy bottomed pan,until it is reduced to half  for about 10 minutes.
